- 300 grams (0.661 pounds) raw kadayif
- 5 tablespoons butter
- 6 tablespoons granulated sugar
- 1 cup chopped walnuts
- 4 cups milk
- 1 cup granulated sugar
- 1 cup flour
- 2 tablespoons corn starch
- 1 egg yolk
- 1 package vanilla extract
- 1 package (200 ml) whipped cream
This kadayif with yummy milk pudding is both crispy and soft. While the top and the bottom of kadayif is crsipy thanks to kadayif pieces, the inner side is pudding-like soft -guess it- thanks to pudding. Honestly, its making is a bit hard and finding kadayif might be difficult in most countries. However, just go to a Turkish supermarket and you can easily find some kadayif. This dessert is best served in tea session after meals when Turkish people visit eachother. You should give a chance to this recipe if you like both Turkish desserts and puddings.
A pot or a sautepan

Chop kadayifs finely (you may chop them easily if you set them aside in fridge for a while).
Add butter, kadayif and granulated sugar into a deep pot or sautepan and make kadayifs sauted by stirring (it takes a while to kadayifs saute and make sure that stove is set to medium heat).
When kadayifs are sauted a bit, add chopped walnuts and saute again. You may finish sauting when kadayifs are pink enough. But take them into another pot. If you don’t do this, they can be easily burnt).
Now prepare milk pudding. First, pour milk and add granulated sugar into a pot and stir. Add egg yolk, corn starch and flour. Then simmer. When it is soft enough, turn off stove, add vanilla extract and stir again.
When the pudding is cooled, add whipped cream on it and beat by using an electric mixer and make it smooth.
Take the half of the sauted kadayif onto an oven tray and spread milk pudding on it. Then take the other half of kadayifs and make them spread equally. You may serve it after setting aside in a fridge for a few hours.
