- 1 package lady fingers (x24)
- 2 cups milk
- 3 cups milk
- 3 tablespoons flour
- 1 egg yolk
- 1 cup granulated sugar
- 200 grams (0.440 pounds) mild cream cheese
- 1 tablespoon vanilla extract
- Ready made chocolate sauce or pudding
- Various nuts
Eclair has a French origin, but it is liked in Turkey too. In every patisserie you can find them, but have you ever thought that you can make it at your home? This is very very easy with some lady fingers. By the way, we name lady fingers as “kedi dili” and this means “cat’s tongue” because of its shape. I used ready made lady fingers, but you can make your own lady fingers too if you wish. This is easy too, but I will give its recipe on following weeks. For now, please only use ready made lady fingers I think you can find it in your local store, supermarket or grocer. If you can not find, please write to me and I will give its simple recipe.

Place flour and granulated sugar into the pot and stir. Add egg yolk and milk onto this mix and stir again. Boil until it is soft enough like cream. Then set aside until it gets warm.
When cream is warm enough, add vanilla extract and mild cream cheese. Then mix by using an electric mixer until it is smoother. Set this cream aside for a few hourn in fridge.
Pour milk onto a wide plate. Dip lady fingers in milk and place them on plate. Give some space between each other.
Pipe cream on each lady finger. Place remaining lady fingers on the lady fingers you piped after dipping them in milk. If you like cream, you may pipe again.
You may use chocolate sauce if you wish and you may use pudding instead of sauce. And you may use some chopped nuts to garnish. Set aside in fridge for a couple hours and serve!
