- 2-3 medium sized leeks (sliced as rolls)
- 2 medium sized carrots (diced)
- 1 medium sized onion (diced)
- 4-5 tablespoons olive oil
- 1/3 cup rice
- ½ tablespoon lemon squeeze
- 1 tablespoon tomato paste
- 4 cups water
- A pinch salt
I don’t know much about leek, but the only thing I know it’s yummy and like it or not, it’s healthy. Once you cook this dish, you may serve it with some yogurt on it. Add oil and onions into the pot.
Saute until onions turn pink and then add tomato paste.
Saute for a while and when it is sauted, add diced carrots and stir for a few times.
Add chopped leeks and stir. Add water then stir again. And add lemon squeeze and salt then stir for the last time.
Wait for 5-10 minutes until it boils and then add the rice you washed for a few times. Then stir again.
Cover the pot and simmer for 20-25 minutes until the leeks soften.
