  • 4 Turkish yufkas
  • 2 egg whites
  • 1/3 cup olive oil
  • 1/3 cup water
For Filling
  • 250 grams (0.551 pounds) mince
  • 1 onion
  • 1/4 cup bulghur
  • 1/4 cup water
  • ½ cup walnut
  • 5-6 leaves parsley
  • 1 teaspoon tomato paste
  • 1 teaspoon red pepper paste
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • A pinch salt
  • A pinch red pepper
  • A pinch black pepper
For Topping
  • 1 cup bread crumbs
  • 1 egg
  • 1/3 cup water

About Mince Pastry:

Yufka, as known as phyllo dough is an essential ingredient for Turkish pastries. This pastry I gave its recipe has mince in it. We have a meatball type “içli köfte”. You may know it as kubbeh. The mince in this pastry looks like the mince in kubbeh. With yufka, it is very delicious and satisfying. You may serve it as a side dish or your guests can taste it on five o’clock tea sessions.

  3. A spoon

  4. A knife

  5. Greased paper

    First of all, prepare the filling. To do this, take the bulghur to a pot and add 1/4 cup water on it and mix. So, we will get softened bulghur.

    Pour the olive oil onto the sautepan and add diced onions on it. Saute until onions turn pink. Then add the mince on it. Mix again until they are sauted.

    Take the softened bulghur onto the sauted onions and mince. Add the chopped walnuts and parsley and mix. Finally add the tomato paste, red pepper paste, butter and other spices (salt, red pepper and black pepper) and mix well.

    Take 2 egg whites, 1/3 cup water and olive oil into a pot and mix. Then lay a yufka onto a flat surface. Apply this mix onto the yufka. Take the second yufka and do the same.

    Divide these two yufkas to eight pieces. Take the mix with mince on to these pieces and fold the edges inside as shown on the photo. Apply the same process to the remaining two yufkas.

    For topping, take the egg and 1/3 cup water, then stir. Dip the rolled yufkas to this topping and then to the bread crumbs. Finally take all of them to the oven tray with greased paper on it and bake in the oven preheated to 200 °C (392°F) and bake them until their tops redden.
