- 250 grams (0.55 pounds) mushrooms
- 2 roasted red pepper (chopped)
- 4-5 pickled gherkins (chopped)
- A small bowl sweet corns
- 2 tablespoons lemon juice
- A pinch salt
- 4 tablespoons olive oil
- Hot water
I have always liked mushrooms and we eat them frequently. If you remmeber, previously I gave some other recipes based on mushrooms. This recipe is again for vegetarians or vegetable-lovers. I used red pepper, pickled gherkins and sweet corns for garniture, but you may include other vegetables like tomato, zucchini, aubergine etc. Besides, you may use some salad sauces like Mediterranean sauces etc.

Wash mushrooms well and place them into a pot. Then pour water until top of them.
Boil mushrooms and drain water. Wait until they are cool and divide into four.
Add two tablespoons olive oil onto a sautepan. Place mushrooms on it and saute for 7-9 minutes. Them take them to a bowl.
Place roasted red peppers, sweet corns, pickled gherkins, lemon juice and 2 tablespoons olive oil on mushrooms. It is ready to serve after mixing.
