- A medium sized sea bass
- 3 tablespoons olive oil
- A medium sized onion
- A medium sized tomatoe
- A lemon
- A pinch salt
- A pinch thyme

Clean and wash the bass. Be careful with it’s bones, they may hurt you and leave no blood in it.
Make some deep slashes on both sides of the bass (this will make the bass roast better).
Preheat the oven to 200 °C (400 °F) (you may preheat for e.g. 5-10 minutes, after that lower it’s heat to 190 °C~375 °F).
Mix olive oil, salt and thyme and rub this mix and sprinkle with salt over and into the bass.
Chop onion and tomato roundly, then put these onion and tomate rounds with some lemon slices into the bass’ stomach
Put the bass on to a tray with a greased paper on it and roast on 190 °C (375 °F) for 35-40 minutes.
Note: You may serve it with a drizzle of virgin olive oil and squeeze of lemon, if you wish.
