Revani is a kind of sweety and soft dessert of Turkish cuisine. You may think it like a sponge for its softness. Also you may think it as a cake with syrup. It is very traditional and it is first made in Ottoman palaces. Semolina is used as basic ingredient. There are many types of revani: plain, lemon, orange flavoured etc. It is consumed especially on Ramadan feast together with Turkish sarma (dolma). Finally, I have to say that I used a cream for its topping too. Here is the Turkish revani recipe. I wish you will like it.

First off all prepare the syrup. For that, add 2 cups granulated sugar and 3 cups water into the pot and boil while stirring until the sugar melts. Meanwhile preheat the oven to 180 °C (355 °F).
Then set the stove to medium heat and drop lemon juice. Continue to stir for 10 minutes.
When it concentrates enough, set aside and let it cool.
Take the eggs and granulated sugar into the mixing bowl and mix by using an electric mixer for 5 minutes until it foams. Then add the olive oil and milk, mix for a while.
Add the semolina, baking powder and vanilla extract. Continue to mix.
Finally add the poppy seed extracts and stir with a spoon.
Grease the oven tray and pour the mix onto this tray. Bake until its top reddens.
When it is baked, set aside until it is warm enough and pour the syrup equally.
Wait for a few hours until it absorbs all the syrup. Meanwhile take the whipping cream and milk to the pot and mix by using a mixer. Then spread the cream onto the cake equally.
You may garnish your cake with poppy seeds for a better looking.
