- 3 medium sized zucchinis, peeled and diced
- 2-3 medium sized tomatoes, grated
- 2 medium sized carrots, chopped
- 3-4 tablespoons olive oil
- A pinch salt
- 1 tablespoon tomato paste
- 3 cups hot water
This traditional Turkish dish is again one of my husband’s favourites. It’s easy to prepare and very practical for you hands. Besides, it is very very healthy. This recipe is also for people on a diet. You may not use oil if you wish or if you on a “hard diet”. Some yogurt will be perfect on it and it will help to digest it. You may use some garlic inside the yogurt, but be aware of its smell!

Add the oil to the pot, and then add the diced zucchinis, carrots, tomatoes and tomato paste.
Sprinkle the salt and pour the hot water little by little from the edge of the pot.
Cover the pot and simmer for 15 minutes. Then stir for a few times and continue to simmer.
Turn off the stove when it starts boiling. You may serve with some yogurt if you wish.
